Come cook virtually with Denise Stephens. You will make a lasagna that even Garfield that Cat would be proud of (for those of us who remember Garfield). We’ll give you the ingredient list and you can cook alongside of Denise with great conversation and friendship. Feel free to bring your own wine or cocktail!
Join us on Wednesday, May 13th at 3:00 PM for a special Zoom cooking class!
This class is open to anyone age 13 and above. Some adult supervision might be necessary for younger kids.
Zoom access to class will be emailed upon registration.
Here’s your shopping list with recommendations for substitutions if need be!
1 box no cook lasagna noodles (Gluten free is ok)
1 jar spaghetti sauce. I like the tomato garlic sauce from Trader Joe’s
4 cups shredded mozzarella
16 ounces whole milk ricotta cheese
1 cup Pecorino Romano cheese
10 ounce package mushrooms (optional, however I recommend you give it a try)
1 bulb garlic
1 bunch Italian parsley
1 lemon
I egg
Small bunch basil
Red wine (my choice) or beef broth
Olive oil
Onion powder
Garlic powder
Italian seasoning
Red pepper
Salt
Pepper
If you are lactose intolerant, you can purchase soy mozzarella cheese. I have found the cheese from Light Life or Trader Joe’s to be the best. Dayia is awful. Also get 16 ounces of soft silken tofu. About an hour before class, drain the tofu and put the tofu on a plate lined with several sheets of paper towels. Put more paper towels on top and cover with a plate. Put a heavy can on top of plate to press the water out of the tofu. Leave until class. Also, have a food processor nearby if you own one.
If you can’t find the no cook noodles, you can buy 1 pound of tortellini or any short cut noodle like rigatoni. Before class, cook the pasta in boiling, salted water, two minutes less then package directions say. Drain and DO NOT rinse the noodles. Just toss the pasta with a very small amount of olive oil to keep it from sticking.
Other than salt, the other listed spices are highly recommended, but not absolutely necessary. You do not have to buy them if you don’t already have them in your pantry.
Tools needed for class:
9×13 baking dish
Knife
Cutting board
10 or 12 inch skillet
Measuring spoons
2 Medium size mixing bowl
Mixing spoons
